After an education at Le Cordon Bleu Ottawa Culinary Arts Institute, volunteer stints at some of the top restaurants in Toronto, New York and Europe, as well as Calgary's Rouge, chef Trevor Ross landed at the helm of a 160-seat restaurant in an unlikely locale — Calgary's deep suburban southeast. Starbelly opened in the Seton neighbourhood in November of 2014, and Ross was given carte blanche by the restaurant's backers to create his dream eatery. The restaurant's name reflects this, as it refers to a Dr. Seuss book whose star-bellied characters represent individualism and uniqueness. In realizing his cuisine vision, Trevor has given Starbelly a bright, unpretentiously rustic atmosphere and a hearty menu of classic dishes that feature creative twists.

    Starbelly feels like an oversized rustic-upscale Cape Cod cottage set deep in the southeast suburb of Seton, right near the South Health Campus. Outfitted in reclaimed barnboard and clapboard with weathered aqua paint, post-and-beam accents and huge windows, its airy rooms are set with warm wood tables. Starbelly features an open kitchen and a large central bar with seating all around, surrounding the finishing kitchen and grill. It’s good, hearty, contemporary food. Try the eatery’s amazing take on calamari, and its star dessert: the sourdough root beer doughnut with vanilla bourbon gelato and caramel drizzle. Dinner for one, please.

With unique flavours and country-style elegance, Starbelly strives to push the envelope with their ‘house made’ philosophy. Duck prosciutto, cured wild Pacific salmon, pastrami, and house-cured bacon are all featured extensively on the menu but the house-cured bacon is notably featured in the house burger and brunch menu. It can be a bit of a drive, but you’ll leave feeling well fueled for the day ahead.

Don’t forget to end your evening with Starbelly’s famous root beer doughnut with bourbon vanilla gelato.
