Meet the owner

Andrea Carlson, chef and co-owner of Burdock & Co, is no stranger to either sustainability or the restaurant world. With more than 20 years in the business — much of it in fine dining — she has served as the sous chef at C Restaurant (which led the charge on local, sustainable seafood), and was the executive chef at Bishop's.

She has built a kitchen garden for a restaurant in Tofino, and spent eight months learning to work with garden ingredients at Sooke Garden House. As the sous chef at the Raincity Grill, she was the first in town to create a menu based on the famous 100-Mile Diet, forming relationships with local farmers and growers (including Foxglove Farm and Innercity Farms) that continue to this day. As both an avid gardener, and a student of organic farming, Andrea's commitment to keeping things natural goes far beyond the food.

“As well as being dedicated to local food and growers, we offer Vancouver’s first exclusively natural wine list, applying the same principles we support in farming stewardship for food to our wine purchasing program,” she says.

Andrea Carlson has been lauded by local dining critics for her farm-to-table fare, but she isn’t the only star at this Mount Pleasant dining room. Wine director Matthew Sherlock recently earned the 2016 Gold Award at the Vancouver International Wine Festival, and he’s known to favour naturalist wines. If you’re a rosé fan, we recommend ordering a tasting flight to try the three varietals on offer: an earthy, strawberry-infused Rosé Biscaya from Austria; a dark, rich Rosa di Elena Sangiovese/Cab Sauv blend from Italy; and a dry French Bernard Baudry Rosé with subtle hints of raspberry and rhubarb.
