Meet the owner

Born and raised in Vancouver, Dan Olson started his culinary training in high school and developed a passion for cooking at an early age. “It's all I know,” says the award-winning chef and restaurateur behind Vancouver’s Railtown Cafe and Railtown Catering. “I just developed a love for it. I started entering cooking competitions – and winning – when I was 15 years old. I never wanted anything else.”

After high school, Dan decided to forgo formal culinary school training and went to work in the industry right away, starting out at the Century Grill restaurant in Yaletown. Soon after, head chef Robert Sulatycky asked a then 19-year-old Dan to apprentice for him at the prestigious Bocuse d’Or world chef championship in Lyon, France. “Out of the 24 countries that competed, we came in fourth,” says Dan. “That’s the best that Canada has done still to this date.”

Following his success at the international competition, Dan’s culinary career took off. He worked with the Four Seasons chain for many years, travelling throughout North America. Later, he relocated to California to serve as the executive sous chef at the award-winning Beverly Hills Hotel and as executive chef at the acclaimed Hotel Bel Air.

Dan eventually returned to Canada in 2012 to help coach the Canadian team for the Bocuse d’Or competition. At that point, he decided to stay close to home, taking on a consulting project before partnering with chef Tyler Day to launch Railtown Cafe and Railtown Catering in Vancouver’s emerging Railtown neighbourhood.

We used this company for a company function and must say that from the moment we began working alongside their team - the whole project fell into place. Great staff and great turn around time and certainly highly recommended!

Must-try lunch spots in Vancouver's Railtown neighbourhood

Must-try lunch spots in Vancouver's Railtown neighbourhood

Step beyond the vast garage doors into the warm-yet-industrial space of Railtown Café, and you’ll be met with aromas of freshly baked bread, roast meats, and homemade sauces – and most likely a line-up. A favourite with the local workforce, this café’s fare is worth the wait time. Choose from sandwiches that are so packed with fresh ingredients and flavours that it’s almost rude to eat them in public; customize your own salads full of interesting items such as squash chips, roasted asparagus, and Stilton; or enjoy a slow-cooked meat with delicious side. Bring your appetite; visit often.

Get your greens: Where to find Vancouver’s tastiest salads

Railtown’s best-kept secret is a secret no more. The award-winning catering company’s on-site café has a seriously delicious weekday menu of handmade salads, soups and sandwiches that have earned it a bit of a cult following among Vancouver foodies. There are six signature salads on the menu and of course there’s the option to build your own artisanal creation. Gourmet toppings include broccolini, radishes, pickled cauliflower and pesto bocconcini. The protein selection here is a step above the usual lunchtime salad bar: the meaty options include braised beef brisket, pulled pork shoulder, poached salmon and juicy jumbo shrimp.

Back off, get your own sandwich! Vancouver's must-try delis

Proudly smoking their own meats or slow-roasting brisket for 35 hours, the chef and partners behind this welcome café in the increasingly populated Railtown neighbourhood bring real foodie cred to their latest venture. In-house baking, sous-vide cooking and the uncompromisingly fresh ingredients found in the sandwiches all contribute to making this a new favourite lunch stop for the fashion creatives and start-up techies at work just east of Gastown.
