Tableau Bar Bistro — inside the Loden Hotel in Vancouver's Coal Harbour— opened in 2009 as Voya, a fine dining restaurant, but shut down in January 2011. By the fall of that year, the space was reimagined as Tableau Bar Bistro. “I was here when we reopened as Tableau," says chef de cuisine Garett Blundell. "But shortly after, I headed to England to work at a couple of  Michelin-star restaurants." In 2015, he came back to the multiple award-winning bistro. The same year Tableau Bar Bistro took gold for Best Casual French in Vancouver Magazine’s 2015 Restaurant Awards.

Garett began his culinary journey in Victoria, honing his skills at Brentwood Bay’s Arbutus restaurant. This was followed by stints at top Vancouver eateries such as Bistro Pastis, before heading to London, England to train in two of chef Gordon Ramsay’s Michelin-star restaurants. “In England, I learned a level of dedication, passion and hard work that was inspiring,” Garett adds. “It taught me how to work hard under extreme pressure and what it takes to reach excellence … there is no room for error.”
