In a beautifully appointed venue in the mammoth entertainment complex, Parq Vancouver, The Victor delivers exactly what Vancouverites were looking for: a swanky dining room overlooking BC Place Stadium, False Creek and Vancouver's skyline that focuses equal attention on superb Pacific Northwest cuisine and exquisite platting.

Tucked into the sixth-floor rooftop urban park, you’re in this elegant little oasis the moment you emerge out of the elevator shaft. The inspiration behind The Victor comes from power couple, award-winning executive chef Kim Canteenwalla and his wife Elizabeth Blau (credited with transforming Las Vegas into the world-class culinary destination it is today). The couple is responsible for all eight chef-driven restaurants and lounges at Parq Vancouver.

Kim’s resume is as impressive as the restaurant itself. One of Las Vegas’s most lauded chefs and James Beard Award – nominated restaurateur of the year, owns a host of American restaurants. However, the Montreal-native was lured back to Canada with this project. “Coming back to Canada feels like I’ve come full circle,” explains Kim. “I knew I didn’t want to go back to Montreal’s cold winters and I’ve always loved Vancouver. When this opportunity came up, I was thrilled.”
