Coffee became something of a comforting, cozy blanket back when Troy Kelly was an officer in the Canadian Navy. "It got me through some wet, cold times," he recalls with a grin. "I started to appreciate the flavour rather than just the stimulant aspect of coffee and luckily, because of my rank, I had privileges. I could bring my own coffee and equipment on board so I didn't have to drink the issued coffee."
Troy had been a coffee lover before his experience sailing the high seas. When he graduated from university, he bought himself the gift of an espresso machine. That being said, his time in the military polished his taste buds and deepened his relationship with the drink. "It was perfectly natural for me to go into coffee roasting and open Outpost Coffee Roasters afterwards," he says.
Nowadays, Troy savours two cups of coffee every day and samples around 20 for his roastery. Troy chose a name with a slight military vibe. "I liked the idea of the name outpost because it's neutral," he adds.
