Meet the owner
When we say that Le Cheval Blanc is a pioneer in the art of craft beer, we mean just that. After its former incarnation as a classic ’50s tavern, it was in 1981, under the management of owner Jérôme C. Dionysius, that the establishment was gradually transformed. A few years later, in 1987, Le Cheval Blanc obtained the first craft brewer licence: #001. It was the beginning of a new era in brewing.
“Before that, there was nothing,”says current owner, Luc Senécal. Today it might be hard to imagine a Montreal without the microbreweries on every street corner. Le Cheval Blanc, however, has admirably stood the test of time without falling prey to the latest trends. A bit like a good bottle, it’s only gained value with age.
